Executive Chef Jean Delport’s path to Interlude, Restaurant with Rooms, is a captivating exploration of global flavours and techniques. Earning not just one but two Michelin stars along the way - the prestigious red star in 2019 and the coveted green star in 2023 which highlights restaurants at the forefront when it comes to sustainable practices.

His culinary journey began in the heart of South Africa’s Cape Winelands, where fresh seasonal produce and a deep appreciation for nature were instilled in him. This foundation was further enriched by his experiences in Ireland, broadening his culinary range.

His unique culinary style fuses British and French techniques with his South African heritage, emphasising local and foraged ingredients, drawing inspiration directly from the award-winning woodland gardens that surround Interlude. This approach crafts a menu that leads diners through the enchanting woodland gardens of Leonardslee. Each meticulously crafted dish is a reflection of Jean’s attention to detail and his unwavering creativity, pairing expertly with our new collection of Sussex sparkling wines.

Johann’s philosophy is “To bridge the gap between the science and the artistry of making wine: that’s why I enjoy spending time with consumers, not just to share our story and passion for what we do, but also to get a deeper insight into their interest in wine, and to reflect that in every bottle we produce”. 

As the winemaker of both Benguela Cove Lagoon Wine Estate in South Africa and Leonardslee Family Vineyards in the UK, Johann's unwavering dedication to the art of winemaking has earned him a reputation as a true master of his craft. With a career spanning the globe, Johann's journey has taken him to the most renowned wine regions, where he has honed his skills and refined his expertise.

Johann's commitment to excellence is evident in every aspect of his work, from the meticulous selection of the finest grapes to the precise application of cutting-edge winemaking techniques.
